Easy but tasty

Two of the frequent asked questions that Ive been getting from people since Ive started writing this blog are, "Do you prepare a PROPER meal for your family EVERYDAY? Where do you get time to cook, especially with a small kid around?"

To be very honest, I dont know what exactly should be my answer to this. I do love investing time in the kitchen and although my son is quite a handful, I do cook on daily basis.


But let me be honest with all of you, preparing a complete meal after a long tiring day is not always fun - not even to me. However, I do have my collection of easy and tasty recipes for difficult times that cause almost no stress with preparation but are so delicious in taste that everyone at my home enjoys eating them.

My most favourite gadget in the kitchen is my oven. I believe, an oven can be your best helper if you know how to utilise it as it can literally take half of the stress away once the dish is in its custody...











Baked Tagliatelle with Veggies




Ingredients:
Tagliatella pasta, boiled in salted water
1/2 red capsicum, cut in strips
1 cup blanched broccoli
1 cup blanched spinach
1/2 cup sliced mushrooms
1 tbs oil
1 tbs butter
1 cup boneless chicken strips ( optional)

1/4 tsp garlic paste (optional)

For the Sauce:
1 tbs oil
1 1/2 tbs butter
2 tbs flour
100g cream
250 ml milk
1 small finely chopped onion


1 cup cheese (any pizza cheese would be fine)

Heat butter and oil in a pan, fry the chicken pieces (add some garlic paste/powder), add the sliced mushrooms and fry for a while. Also add the blanched broccoli (I often use the frozen one and microwave it for 2 and half minutes). Season with salt and pepper. 





 

Prepare the sauce by heating the oil and butter in a small sauce pan. Put onions in it and fry until they change their colour and become translucent. Add the flour and when it starts bubbling, take off from heat and add milk and cream, salt, and pepper while stirring continuously.






Take an oven-proof dish, spread the al-dente cooked pasta on the bottom and sprinkle some cheese on it.






Spread the (chicken and) fried veggies, then roughly spread the blanched spinach leaves (I used the frozen ones, so didnt blanch rather microwaved for 2 and half minutes:)






Now pour the prepared sauce over it and sprinkle more cheese. Bake for 15 minutes.

  1. it seems really easy nd tasty:)would deffinetly cook.i love all pastas,baked,gratin etc.i never used spinach in noodle/pasta dishes but now surely try it.
    and fatima,i was all smiles after reading ur microwave use to blanch broccoli and spinach,really quick:)
